Potato Gnocchi in a Hearty Tomato Sauce with Burrata

INGREDIENTS (2 Portions):
For the Tomato Sauce:
½ tbsp olive oil
½ small onion, finely chopped
2 tbsp butter
1 to 1½ cups finely chopped tomatoes (cherry tomatoes halved, or any flavorful tomato variety)
Salt and pepper, to taste
½ tsp vegetable bouillon (optional, for depth)
Herbs to taste (e.g. basil, rosemary, or a herbs de Provence mix)
For the Gnocchi:
1 package (about 14 oz / 400g) potato gnocchi (fresh or store-bought)
To Serve:
Grated parmesan
1 ball fresh burrata
Fresh basil leaves (optional)
Utensils:
Roasting pan or large skillet
Wooden spoon or spatula
Knife and cutting board
This comforting potato gnocchi in a rich, buttery tomato sauce is one of those simple meals that feels like a warm hug. Made with fresh tomatoes, herbs, and topped with creamy burrata, it’s a quick yet elegant dish that’s perfect for weeknights or date nights at home. The gnocchi soak up all the flavor from the sauce, making every bite irresistible. Ready in under 30 minutes — and no fancy ingredients required!
01 – Make the Tomato Sauce
In a roasting pan or large skillet, heat ~½ tbsp olive oil over medium heat. Add the finely chopped onion and sauté until translucent.
02 – Simmer the Sauce
Add 2 tbsp butter and let it melt gently. Stir in the chopped tomatoes and let them cook down on medium-low heat for 10–15 minutes, stirring occasionally. Season with salt, pepper, a pinch of vegetable bouillon (optional), and your favorite herbs. The sauce should be rich and well combined — buttery, but not burnt. If the sauce feels too thick, add a splash of water.
03 – Add the Gnocchi
Toss the gnocchi directly into the tomato sauce and let them cook through in the pan for a few minutes until heated and coated.
04 – Serve and Garnish
Transfer to plates or bowls and top each portion with some freshly grated parmesan, and a torn piece of burrata. Garnish with fresh basil.
