INGREDIENTS (2 Portions):

For the Cheese Sauce:

  • 1 tbsp butter

  • 1 tbsp all-purpose flour

  • ~½ cup milk (any milk works — I used oat milk)

  • ~½ cup shredded cheese (a mix of meltable cheeses is best)

  • Salt, pepper, and nutmeg (to taste)

For the Pasta:

  • 1 to 1½ cups cooked elbow macaroni

For the Breadcrumb Topping (optional but delicious):

  • 2 tbsp butter

  • 2 tbsp breadcrumbs

  • Pinch of salt

UTENSILS

  • Medium sized pot for the pasta

  • Small sized pot for the cheese sauce

  • Small frying pan for the breadcrumbs topping

  • Silicone spatula

  • Whisk

SIDES

01–Prepare the Pasta
Cook the pasta according to the instructions on the package. Once done, strain it, add a splash of oil to prevent sticking, and set it aside while you prepare the cheese sauce.

02–Make the Cheese-Sauce
In a small pot, melt 1 tbsp butter, then whisk in 1 tbsp all-purpose flour to make a roux (German: Einbrenne).

Gradually add ~½ cup milk (I use oat milk — any milk works). Whisk until smooth and let it bubble up. Add more milk as needed until you get a creamy sauce.

Stir in ~½ cup shredded cheese (use a mix of meltable cheeses — yum!). Season with salt, pepper, and nutmeg to taste.

Fold in cooked elbow macaroni and you’re done!

06 Breadcrumb Topping (optional but amazing):
Melt 2 tbsp butter in a pan, stir in 2 tbsp breadcrumbs, and toast over medium heat until golden brown. Remove from heat and add a pinch of salt.
