This quick and creamy mac & cheese is our go-to comfort meal — ready in just 5 minutes, made with simple ingredients, and packed with flavor. It starts with a velvety homemade cheese sauce (no store-bought mix!), stirred together with tender macaroni and topped with golden, buttery breadcrumbs for that perfect crunch.
Whether you're short on time during a busy weekday lunch or just craving something cozy and nostalgic, this recipe delivers every time. Bonus: it works with any milk you have on hand — even plant-based!
This is one of those meals that’s always met with smiles at the table — from toddlers to grown-ups. A true family favorite that never gets old.
01–Prepare the Pasta
Cook the pasta according to the instructions on the package. Once done, strain it, add a splash of oil to prevent sticking, and set it aside while you prepare the cheese sauce.
02–Make the Cheese-Sauce
In a small pot, melt 1 tbsp butter, then whisk in 1 tbsp all-purpose flour to make a roux (German: Einbrenne).
03
Gradually add ~½ cup milk (I use oat milk — any milk works). Whisk until smooth and let it bubble up. Add more milk as needed until you get a creamy sauce.
04
Stir in ~½ cup shredded cheese (use a mix of meltable cheeses — yum!). Season with salt, pepper, and nutmeg to taste.
05
Fold in cooked elbow macaroni and you’re done!
06 Breadcrumb Topping (optional but amazing):
Melt 2 tbsp butter in a pan, stir in 2 tbsp breadcrumbs, and toast over medium heat until golden brown. Remove from heat and add a pinch of salt.
07
Garnish your mac with the buttery breadcrumbs and serve hot!
